But a sweet potato shakshuka? Yes, yes, a shakshuka made with sweet potatoes – now that’s a refreshing change ☺

As someone who can eat shakshuka morning-day-and night, I thought I’ve already tried every kind of existing shakshuka – spinach shakshuka, Balkan shakshuka, Italian shakshuka, and the list goes on…

I recently discovered a different shakshuka, with a slightly sweet taste that totally managed to warm my heart {and stomach of course… 😉 }.

Many people think you shouldn’t eat sweet potatoes because they are fattening carbs that are full with sugar.

Here’s the thing – they’re not.

Sweet potatoes have many nutritional benefits, and adding it to your menu not only won’t make you gain weight, like many people think – but it will enrich your body with health components such as beta-carotene {turns into vitamin A in your body}, vitamin C, magnesium, potassium and lycopene, and even helps push processed foods out of the menu.

In addition, eating sweet potatoes significantly reduces cravings for sweets because they raise blood sugar levels in a controlled manner, unlike other sweets that cause sugar and energy falls after eating.

So basically – you really don’t want to pass on the sweet potatoes.

In this recipe, the sweet potatoes are accompanied by coconut oil, which also became a rising star in the health field lately.

Why is it so great? In short you could say that its boiling point is higher than other natural oils, making it superb for baking and cooking, and it has many other wonderful qualities like speeding up metabolism, reducing blood sugar levels and balancing cholesterol.

But if you don’t really enjoy the coconut flavor {makes the dish even a bit sweeter}, there’s no problem in swapping it for classic olive oil.

So let’s head to the kitchen!

◄◄ Sweet Potato Shakshuka ►►

Preparation Time – 20 minutes.

Quantity – 2 servings.

Ingredients

  • 1 big sweet potato, peeled and washed.
  • 2 teaspoons of coconut oil.
  • 4 eggs.
  • Goat cheese or feta cheese {5%}, grated {according to taste}.
  • Salt and pepper.

Instructions

  1. Julienne the sweet potatoes {long, thin slices} with a julienne peeler or with a vegetable grater {the large holes}.
  2. Turn the oven on high heat.
  3. Heat a pan and add the coconut oil.
  4. When the oil is hot, add the sweet potato, salt and pepper {according to your taste}, and stir on and off for about 10 minutes until the mixture is cooked.
  5. Create small niches in the mixture in the pan and add the eggs one at a time.
  6. Cook the eggs for about 2 minutes and add the goat cheese.
  7. Put the pan in the oven for about 8-10 minutes, until the eggs are prepared the way you like them.
  8. Serve hot
