Okay, I know that pasta salad isn’t exactly the first thing people think about as soon as winter comes… but this salad is so good and so simple that I really can’t find a reason to eat it only during the summer.
It’s true that many times our body craves hot food in the winter, like soup or a stew.
And yes, pasta salad has the connotation of a spring picnic on a checkered tablecloth.
But honestly, it’s always fun to have such a quick recipe that you can prepare quickly without too much trouble.
You know what I mean – as a side dish that always waits for you in the fridge when you want to add extra freshness to a meal, or even as a complete meal in itself that you can prepare in an instant.
Besides, this pasta salad is an excellent solution for students or as a meal on the go – simply because it doesn’t require heating or cooling and it’s very satisfying.

Preparation Time – 15-20 minutes.
Cooking Time – 8 minutes {or according to the instructions on the box}.
Quantity – 2 servings.
Ingredients –
- 250 grams of whole wheat pasta.
- 3 grilled red peppers {from a jar}, cut into small slices.
- 1 heaping tablespoon of pesto.
- 1 mozzarella ball, torn into pieces.
- 1 package of arugula.
Instructions –
- Cook the pasta in a large pot with boiling salted water until it’s al dente {according to the manufacturer’s instructions}. Drain and transfer to a bowl to cool off and add a drizzle of olive oil.
- When the pasta reaches room temperature, add all the other ingredients and mix together.
* You can serve it immediately or keep it in the refrigerator up to 3 days.
