THE GOAL – Safely getting through another summer with a temperature that wouldn’t shame hell.
THE SOLUTION –
As a borned and raised Jerusalem girl who moved to Eilat four years ago, I already understood that the best way to cope with the heat of Eilat is to always stay near the air conditioner. Know what? I want to sharpen the last sentence – whoever lives in Eilat knows that you should leave the house as little as possible during July and August. The heat is one thing, but you don’t even want the comfort of the cool sea or the malls, because that's where the whole country is. During my first three years in Eilat, I tried to give sunbathing on the beach during the summer months a chance and every time I was burned again. I’m proud to say that I’ve finally learned from the mistakes of the past – my foot hasn’t touched the shores of the Red Sea since last June! See you on Mosh’s beach only after the holidays… 😉
One of the things that bummed me out about staying away from the beach near my house during the summer months was the popsicle issue. What can I tell you, if there’s a place I allow myself to “sin” with popsicles, it’s at the beach. It’s another way to keep your desired body temperature when you’re out of the water, and when the choice is between a fattening option {ice cream} and a less fattening option {popsicle}, I usually go for the cherry or melon ices. When the visits to the beach were abandoned in order to stay sane in the hot summer, the longing for those popsicles remained…
I decided not skip the pleasure altogether, and if I’m stuck in the house with the air conditioner, then I should at least try to concoct a few unusual recipes for popsicles, that are less common than those found at the beach. The base I chose for all the ices is JUMEX‘s natural fruit juices. Not only do they not contain preservatives or food coloring, they taste the closest to the source from all the other bought fruit juices {my favorite is pineapple juice – perfect!}. For each flavor I chose, I matched ingredients that would remove the ices from their comfort zone and make them surprising and refreshing, and the result is right here before you.

Mango-Chia-Kiwi Popsicles
Preparation time – 5 minutes / freezing time – 4 hours
Quantity – 4 popsicles
Ingredients –
→ 1.5 glasses of JUMAX mango juice
→ 1 tablespoon of chia seeds
→ 2 kiwis, peeled and sliced
Instructions –
1. Mix the mango juice and chia seeds in a comfortable dish to pour from after.
2. Pour the mixture into an popsicle mold and fill up to 2/3 of the height of the mold.
3. Place one or two slices of kiwi in each popsicle mold.
4. Put in the freezer for at least 4 hours.
5. Remove carefully and enjoy 🙂
Apples-Ginger-Sage Popsicles
Preparation time – 10 minutes / freezing time – 4 hours
Quantity – 4 popsicles
Ingredients –
→ 2 cups of JUMAX apple juice
→ 1 teaspoon of finely chopped sugared ginger
→ 2 large sage leaves + 8 small sage leaves {for decoration}, washed & dried
→ 8 thin slices of apples
Instructions –
1. Mix half a cup of apples juice and the large sage leaves in a small pot and bring to a boil.
2. Turn off the fire, let the liquid cool down to room temperature and strain the mixture {throw out the cooked sage}.
3. Mix all the ingredients together in a comfortable dish to pour from after.
4. Pour the mixture into an popsicle mold.
5. Put in the freezer for at least 4 hours.
6. Remove carefully and enjoy 🙂
Red Chili – Pineapple Popsicles
Preparation time – 5 minutes / freezing time – 4 hours
Quantity – 4 popsicles
Ingredients –
→ 2 cups of JUMAX pineapple juice
→ Half a red chili pepper
Instructions –
1. Cut the red chili into thin rings. If you don’t want it very spicy, remove all seeds.
2. Mix the pineapple juice, chili slices and vodka in a comfortable dish to pour from after.
3. Pour the mixture into an popsicle mold.
4. Put in the freezer for at least 4 hours.
5. Remove carefully and enjoy 🙂
* The chilis has a tendency to float in liquid, so they will be in the back of the ices {if you use a mold like mine} or at the bottom {if you use a standing mold}. In order for the ices to come out as in the pictures, freeze one-third of the liquid together with the chili slices until completely frozen and then add the rest of the liquid.
Peach-Honey-Thyme Popsicles
Preparation time – 10 minutes / freezing time – 4 hours
Quantity – 4 popsicles
Ingredients –
→ 1 + 1/2 cup of JUMAX peach juice
→ 3 thyme branches
→ 2 tablespoons of honey
→ Half a peach sliced
Instructions –
1. Place two thyme branches in a small pot and let the thyme release the oils for a few minutes on a low flame.
2. Add half a cup of peach juice and bring to a boil.
3. Turn off the fire, let the liquid cool down to room temperature and strain the mixture {throw out the cooked thyme}.
4. Cut the remaining thyme branch into small pieces.
5. Mix the rest of the peach juice, honey, thyme water, sliced thyme branches and peach slices in a comfortable dish to pour from after.
6. Pour the mixture into an popsicle mold.
7. Put in the freezer for at least 4 hours.
8. Remove carefully and enjoy 🙂
