At first glance, chia seeds aren’t particularly impressive – they have no taste or smell and they are super tiny.

Let’s put it this way – they don’t have the beauty or the sweetness pineapples have, for example ?

You wouldn’t even guess that this is one of Mother Nature’s best superfoods offered to us.

You know how it is – a lot of times the best things come in small packages – and that’s exactly the case with these wonder seeds.

Just like other superfoods (spirulina and cocoa}, the origin of chia seeds is in South and Central America where the Hispanic sage plant grows naturally. For hundreds of years, these seeds were the base of the Mayans and Aztecs diets, because they were an available source of energy.

Available source of energy over a long period of time? A good enough reason for me to add chia to my daily menu!

Honestly, in case you missed it, I’m a “chia junky” for a long time already – I even added these seeds in this recipe, and in this one, too. .

Since chia seeds are tasteless, it’s very easy to incorporate them in every meal – I like adding 2 teaspoons of chia seeds to fruit or vegetable salads, to sprinkle on toast with a spread and I especially like using them to make this perfect pudding that I’m sharing with you today.

Why is it perfect?

Because it’s extremely tasty {reminds me of a Thai tapioca dessert, in its texture and flavor, without all of the effort involved in its preparation},

Because it takes exactly one minute to make it,

Because it’s perfect for people who want to eat healthier but don’t have time to spend on cooking,

And because it’s always good to have in the fridge – for breakfast, dinner or even as a very healthy treat.

Oh, yeah – it’s also gluten free, natural and organic!

◄◄ Chia pudding with seasonal fruits ►►

Preparation Time – 1 minute!!

Cooling Time – Overnight in the fridge {or at least two hours}.

Quantity – 1-2 servings.

Ingredients

  • 1/4 cup of chia seeds
  • 1 cup of unsweetened coconut milk {I really like the one in the picture}
  • 1 tablespoon of honey or natural maple syrup
  • Toppings: seasonal fruits, sliced.

Instructions –

1. Mix the chia, coconut milk and honey {or maple} in a jar or in a bowl with a sealed cover. First mix it with a fork and make sure there aren’t any lumps at the bottom of the jar, and after that, close the jar well and shake it until blended.

2. Put it in the fridge overnight {or for at least two hours} – the longer the pudding will be in the fridge, the thicker it will get.

3. Remove from the fridge and add your favorite fruits.

I recommend doubling the quantities to enjoy this pre-made snack that will wait for you in the fridge in cases of sudden hunger attacks ?
