When I was a little girl, my favorite dessert was strawberries with sugar. So simple, and so yummy! I remember how I used to wait for the second I would get a big bowl of this delicacy and how I finished it within seconds. Although I avoid the extra sugar today, my love for strawberries is stronger than ever 🙂
It's great eating them as is and also in smoothies, smoothie bowls, desserts {like this one} and even cut in slices in chilled water to make homemade flavored water!
The prices for strawberries finally started dropping, and I decided that it's a good enough reason to share this recipe for the perfect salad you can make in a matter of minutes, with the strawberries as the leading act. It may seem weird to you to mix strawberries in salad – but trust me – it comes out beyond perfect! The combination of fresh green leaves, avocado and strawberries is wonderful… A touch of a red onions adds a gentle spiciness and the nuts give it crunchiness and depth in flavors that leave you wanting more.
I combined this salad with a simple and healthy dressing that just adds to the whole celebration, and sometimes I add feta cheese – even though the vegan version is amazing as is.
After you make yourself this salad I'm sure you'll love it so much that you'll make it for all your gatherings with friends – so if you're planning on making it for a picnic (perfect!), brunch with friends or even for Friday night dinner – don't forget to add the dressing right before serving it so it doesn't get mushy and lose its beauty 🙂
All that's left is to wait for deals of double packs of strawberries for 10 shekels and start freezing the strawberries for summer smoothies! 😉
◄◄ Spring Salad With Leafy Greens, Strawberries And Avocado ►►
Preparation Time – 10 minutes
Ingredients –
For the salad :
50 grams of washed baby leaves
50 grams of washed Slanova lettuce
A third package of strawberries
Half of a ripe avocado
Half of a red onion
30 grams of pistachios without shells
30 grams of sunflower seeds without shells
For an upgrade, you can also add: goat/sheep feta cheese or crumbled blue cheese
For the dressing :
3 tablespoons of olive oil
Half of a lemon
2 small garlic cloves
1/2 a tablespoon of Dijon mustard
1 tablespoon of honey
Salt and pepper for taste
Directions :
1. Put the leafy greens in a big bowl.
2. Cut the strawberries in halves and quarters and add them to the bowl.
3. Cut the avocado into cubes and add them to the bowl.
4. Slice the onion into thin pieces and add them to the bowl.
5. Add the nuts and almonds to the bowl.
6. Add the crumbled cheese (optional).
7. Mix all of the ingredients for the dressing well in a jar.
8. Pour the dressing on the salad, mix it and serve right away 🙂
